Sourdough Bakery Expansion Progress Update: Our New Buildings Take Shape

Our Lake Katrine expansion is moving right along, and our new buildings are taking shape.

We've made steady progress since we broke ground and shared the news of our 15,000-square-foot expansion this spring. Site work is largely complete, foundations are in, and the steel is now up — giving real shape to what has, until now, mostly existed on paper.

What's Next

With the frame in place, our construction team will tackle walls and roof through the end of summer. By fall, we’ll move to the interior spaces where we will cool, slice, and ship our sourdough breads for decades to come.

We remain on schedule to complete construction by December 2026, with plans to put the new space to work early in the new year.

Why It Matters

This expansion will increase our capacity for long fermentation sourdough by 50%, giving us the room and custom-built environment to keep baking real sourdough, with no shortcuts. It's a commitment to doing things slowly and intentionally, even as we grow.
