Our net-zero energy facility

 

This week has been inspiring both in the climate action community and here at the bakery. 

In the climate action community, leaders gathered at Climate Week NYC. The theme of the event: getting it done. The message: the time for commitments and plans is over, and the time for action is now. 

Here’s what we are doing right now at the bakery.

We are renovating our original Boiceville location to be a net-zero energy facility. This means that the bakery will produce from renewable sources all the energy that it uses. Clean electrification. For a manufacturing facility! All the breads, pastries, and foods that you purchase from our cafes or markets will be produced from this net-zero facility! 

Big things we are doing to make this possible: 

  1. Engineering and installing efficient, electrified bakery systems.

  2. Electrifying all other mechanicals in the building. No fossil fuel for heating or cooling or cooking.

  3. Building a 350kW on-site solar array, ground- and roof-mount, to meet all equipment demands.

  4. Creating an energy-efficient building envelope and HVAC system.

This week some major progress was made! Our solar panel installation began on the roof. Ground mount racking for the rest of the solar array is in the earth. Interior insulation completed. Key bakery equipment installations completed by our partners at Heuft.
