DICTIONNAIRE UNIVERSEL DU PAIN
DAN LEADER was in Paris last month for the introduction of the DICTIONNAIRE UNIVERSEL DU PAIN (The Universal Dictionary of Bread) under the direction of Jean-Philippe de Tonnac. Bread Alone was included in the dictionary with our apple cider loaf!
While there, Dan spent time with two other very well known and respected bakers: Eric Kayser of La Maison Kayser, and Bernard Ganachaud of Boulangerie Ganachaud, creator of the ubiquitous 'flute gana'. You can also read an article about this event in the January edition of "Compagnons du Devoir", a publication from the Association Ouvrière des Compagnons du Devoir.
DAN LEADER IS NAMED OF ONE OF THE TOP TEN BAKERS IN AMERICA BY DESSERT PROFESSIONAL
We are all so proud that Dan Leader has received such great accolades for being at the forefront of the organic bread baking movement. He share this recognition with Ciril Hitz, Breadhitz, www.breadhitz.com; Amy Scherber, Amy’s Bread, New York, NY; Tom Gumpel, Panera Bread, Richmond Heights, MO; Nancy Silverton, La Brea Bakery, Van Nuys, CA; Jim Lahey, Sullivan Street Bakery, New York, NY; Jeffrey Hamelman, King Arthur Flour Bakery, Norwich, VT; Didier Rosada, Uptown Bakers/Red Brick Consulting, Hyattsville, MD; Jeffrey Yankellow, Simply Bread, Phoenix, AZ; and Steve Sullivan, The Acme Bread Company, San Francisco, CA.
"Bread philosophy: Bread should be enjoyed. For a while we used the tagline ‘Break Bread – Make Peace’, and people really liked the message. It really speaks to the reason that I began baking and why I continue to enjoy what I do. Everyone can relate to bread and nearly everyone who comes to my shop has a story to tell about why they like a particular loaf or how this loaf is the same as or different from the loaf that their German/Polish/Jewish/Irish/French/Italian or South African mother/grandmother used to make! I listen with interest and amusement and wonder to myself how many variations of this have I heard? How many variations are there? It’s endless and always fascinating."
