DICTIONNAIRE UNIVERSEL DU PAIN
DAN LEADER was in Paris last month for the introduction of the DICTIONNAIRE UNIVERSEL DU PAIN (The Universal Dictionary of Bread) under the direction of Jean-Philippe de Tonnac. Bread Alone was included in the dictionary with our apple cider loaf!
While there, Dan spent time with two other very well known and respected bakers: Eric Kayser of La Maison Kayser, and Bernard Ganachaud of Boulangerie Ganachaud, creator of the ubiquitous 'flute gana'.
