Our main bakery sits along a busy country road on the outskirts of the outskirts of a town that no longer exists. The woods across the road from us are dense and clear and the Ashokan Reservoir beyond those pristine woods contains gallons and gallons of fresh, clean water that winds its way to the precious taps of New York City’s finest hydrants.
