Cakes, Pies & Tarts

Bread's sweetest relatives can be found in our cafes. For special occasions or everyday meals, pick up one of our layer cakes, pies or tarts. All of our tarts start with an all-butter shell that is then filled with either fruits or nuts and baked to a honeyed finish with a nutty buttery flavor that melts in the mouth. Our tarts rotate seasonally and are always esthetically pleasing with bright fruits in the warmer months and more rustic nuts or deep chocolates during winters. Pies also change with the seasons, so always check in to see what at its peak deliciousness any given month. Pies are available in cafes as well as our market locations.

Local ingredients are particularly important with our pastries.  We start with either Cabot butter or Boice's Dairy butter, Feather Ridge Family Farms Eggs, pastry flour from Birkett Mills. With our pies and tarts, we go to great lengths to gather fresh fruits from local farms and orchards. In 2010, we increased these efforts even more and were baking with 800 pounds of Fairy Tale and Hubbart squash from Mead Orchards which we roasted, pureed and seasoned for our pumpkin pies and muffins.

Throughout the years we have built relationships with several farmers and buy whatever is freshly picked! Sometimes we will get a call saying "come and get 5 flats of raspberries; they are about to turn!"  If the fruit is too unsightly for a tart, we simply make a batch of jam! These jams are available for purchase in our cafes. If not partaking in pastries, these jams are a perfect sweet compliment to our artisan breads.
