About Our Bread

Bread Alone is a European style bakery nestled in the Catskill Mountains of New York State.

We offer traditional hearth-baked breads. Our organic grains are ground on millstones to our specifications. Our breads are slowly fermented and shaped by hand to fully develop their unique flavors; then baked on the hearth of our wood-fired brick ovens.

Organic Artisan Breads
We have been using organic grains in our hand-shaped breads since 1983. Using organic flours and grains is not a marketing strategy choice for us. It is the only choice.

Our brick ovens were constructed by Andre Lefort, a third generation Parisian oven builder, who we brought here from France along with materials and equipment that are essential in traditional bakeries.

Using recipes and techniques learned from visiting and working with many fine bread bakeries in Europe, Bread Alone is proud to be continuing that tradition. We invite you to visit us at our headquarters in Boiceville, New York, where we conduct tours of the bakery.

BRIOCHE LOAF
We bake our rich Brioche in a loaf for your French toast pleasure. Eggs, milk, unbleached wheat flour, butter, yeast, sea salt, sugar.

ORGANIC CATSKILL WHEAT
Simple whole grain goodness in a square loaf, perfect for sandwiches. Organic whole wheat flour, spring water, organic sourdough levain, organic honey, yeast, sea salt, malt.

CHALLAH
Traditional braided favorite. Unbleached wheat flour, water, kosher eggs, sugar, kosher egg yolks, soybean oil, yeast, and sea salt.

ORGANIC CURRANT BUNS
A tangy sourdough with sweet, juicy currants, organic whole wheat flour, organic unbleached flour, spring water, organic sourdough, and sea salt.

ORGANIC FARM BREAD
The perfect blend of wheat and rye; whole, cracked grains add a crunchy texture. Sourdough in the recipe keeps this loaf moist and flavorful. Organic whole wheat flour, organic wheat flour, organic whole rye flour, organic cracked wheat, organic cracked rye, spring water, organic levain sourdough, sea salt, yeast.

FOCACCIA - Herb or "The Works"
An open-crumb Italian Flat bread. Our variations include "Herb" or "The Works" with roasted onions and calamata olives. Unbleached wheat flour, poolish (a starter), water, olive oil, sea salt, yeast, basil, thyme, and oregano.

ORGANIC FRENCH SOURDOUGH (Levain)
A Bread Alone signature, this delicious rustic loaf is mildly sour. Organic unbleached wheat flour, organic whole wheat flour, spring water, organic levain sourdough, sea salt.

ORGANIC WHOLE WHEAT SOURDOUGH (Miche)
Made with a whole grain flavor and a wheat berry-colored crumb. Organic whole wheat flour, organic unbleached wheat flour, spring water, organic levain sourdough, sea salt.

ORGANIC MIXED GRAIN
A hearty whole grain loaf that is almost a meal in itself. Organic unbleached wheat flour, organic whole wheat flour, organic cracked wheat, organic whole rye flour, organic cracked rye, organic whole millet, organic flax seed, organic corn meal, spring water, organic levain sourdough, sea salt and yeast.

ORGANIC PEASANT BREAD
A simple, country-style bread reminiscent of the breads of pastoral France and Northern Italy. Organic unbleached wheat flour, organic liquid levain sourdough, spring water, organic whole wheat flour, sea salt, and yeast.

ORGANIC RAISIN NUT
Mild and moist crumb blended with walnuts and raisins. Organic wheat flour, organic whole wheat flour, spring water, seedless select raisins, walnuts, organic levain sourdough, and sea salt.

ORGANIC RUSTIC CORN
A thick-crusted flavorful bread made from wheat and cornmeal with a brilliant yellow crumb. Organic unbleached wheat flour, organic cornmeal, organic poolish (a starter), spring water, olive oil, yeast, and sea salt.

ORGANIC SAN FRANCISCO SOURDOUGH
East coast version of a West Coast original. Organic unbleached wheat flour, spring water, organic liquid levain sourdough, sea salt, vital wheat gluten and malt.

SESAME SEMOLINA
A light crumb, thin and crispy crust, covered with fragrant sesame seeds. Unbleached wheat flour, durum wheat flour, organic poolish (a starter), spring water, sesame seeds, sea salt, and yeast.

ORGANIC SOURDOUGH RYE WITH CARAWAY SEEDS
Sour, dense, delicious, and fragrant, this is the Bread Alone version of the classic Jewish rye. Organic unbleached wheat flour, organic whole rye flour, spring water, organic rye sourdough, caraway seeds and sea salt.

ORGANIC SEEDLESS SOUR RYEOrganic unbleached white flour, spring water, organic rye flour, organic rye sourdough, sea salt.

ORGANIC MARBLE RYE
Organic unbleached white flour, organic whole rye flour, spring water, organic molasses, organic whole wheat sourdough, organic rye sourdough, organic coffee, cocoa, sea salt. yeast.

ORGANIC SEEDED SPELT
Ancient wheat baked to rustic perfection, well tolerated by many gluten sensitive people. Organic spelt flour, spring water, spelt sourdough, sesame seeds, flax seeds, sunflower seeds, salt.

WHOLE GRAIN HEALTH with Organic Ingredients
A rich, whole wheat sandwich loaf with a seed studded crumb and crust. Organic wheat flour, spring water, organic levain sourdough, organic honey, flax seeds, sesame seeds, sunflower seeds, sea salt, and yeast.
